- 1 tbsp Olive oil
- 1/2 cup White onion ((chopped))
- 3 cloves Garlic ((minced))
- 1/2 cup Bell peppers ((chopped))
- 2 stalks Celery ((chopped))
- 1 lb Ground beef
- 1 15-oz can Diced tomatoes
- 1 cup Green beans ((trimmed, cut in half if too large))
- 1 tsp Sea salt
- 1/2 tsp Black pepper
Heat olive oil in a dutch oven over medium-high heat. Add chopped onion, minced garlic, chopped bell peppers, and celery. Saute for 5 minutes, until the onion is translucent and the bell peppers have softened.
Add the ground beef and break it up with a spatula. Saute for 5 more minutes, until the beef is no longer pink.
Stir in the diced tomatoes, green beans, sea salt, black pepper, and beef broth. Bring the mixture to a boil.
Lower the heat to medium-low and simmer for 20-25 minutes, until the green beans are tender and flavors have melded.
- For extra depth, add 1 tsp of Italian seasoning with the broth.
- Don't skip sautéing the aromatics first; it builds a crucial flavor base.
- This soup is freezer-friendly! Let it cool completely, then store in airtight containers for up to 3 months.
