Ingredients
  

  • 1 pound smoked sausage (cut into rac{1}{4}-inch slices)
  • 1 cup diced onion (about 1 small onion)
  • ½ cup diced celery (about 1 large rib)
  • 1 tablespoon minced garlic (about 3 cloves)
  • 1 pound Yukon gold potatoes (peeled and diced into 1-inch pieces)
  • 4 cups chicken broth (or vegetable broth)
  • 2 (15-ounce) cans turnip greens (not drained)
  • 2 (14-ounce) cans drained and rinsed Navy beans
  • 1 (14.5-ounce) can tomatoes and diced chiles (not drained)
  • ½ teaspoon Cajun seasoning (more or less to taste)

Method
 

  1. Add 1 pound smoked sausage to a large pot. Stir and cook over medium heat until browned, about 4 minutes.
  2. Add 1 cup diced onion and ½ cup diced celery, and cook for 3 minutes.
  3. Add 1 tablespoon minced garlic and cook for an additional minute, stirring constantly.
  4. Add 1 pound Yukon gold potatoes and 4 cups chicken broth. Bring to a simmer.
  5. Reduce heat to medium-low and stir in 2 (15-ounce) cans turnip greens, 2 (14-ounce) cans drained and rinsed Navy beans, 1 (14.5-ounce) can tomatoes and diced chiles, and ½ teaspoon Cajun seasoning.
  6. Season with salt and ground black pepper to taste. Simmer for 25-30 minutes before serving.

Notes

- For extra depth, brown the sausage well to develop a rich crust before adding other ingredients. This enhances the overall smoky flavor of the swamp soup.
- Don't overcook the turnip greens; they should be tender but still have a slight bite. Prolonged cooking can make them too soft.
- If you prefer a thicker soup, you can mash a few of the cooked potatoes against the side of the pot before serving to release their starch.
